New Mommy Muffins
Monday, February 22nd, 20101 cups oat bran
3/4 cup whole wheat flour
3/4 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup brown sugar
1 egg, beaten
1 cup buttermilk
1/4 cup margarine, softened
1 tsp vanilla
1/4 cup molassas
1/2 – 1 cup dried cranberries
1 Tablespoon grated orange zest
Combine all dry ingredients in large bowl. Add buttermilk, butter, molasses, vanilla and beaten egg. Mix until creamy. Stir in cranberries and orange zest. Spoon into muffin tin, filling cups just to top. Bake at 375F for 15-20 minutes.
